What is a masala omelette?

A masala omelette is an upgrade on the classic omelette, featuring diced onions and peppers (capsicum), green chillies, coriander, and Indian spices.

In other words, it’s a desi upgrade on an omelette. And the desi versions of classics are always better (Read: masala grilled cheese). Once you try this recipe, you won’t be making omelettes any other way.

What ingredients will I need?

To make this simple recipe, you will need:

  • Eggs: Always use free-range, and ideally organic, eggs to make sure they are sourced with ethics in mind. You can use any size of egg – this recipe is very forgiving.
  • Vegetables: I add diced red onion and red bell pepper (capsicum) to this recipe.
  • Green chillies: Green chillies add delicious flavour and are a must in this masala omelette. If you like green chillies, you’ll love my green coriander chutney recipe too!
  • Coriander leaves: Coriander leaves (cilantro) add a fresh flavour to the omelette.
  • Spices: I add turmeric, ground cumin, ground coriander, chilli powder, salt and pepper. You can use as much or as little as you like.
  • Butter, ghee or oil: For frying the omelette.

How to make masala omelette step-by-step

Begin by whisking the eggs in the bowl and adding the spices, diced vegetables, finely chopped chillies and coriander leaves (photo 1). Mix this all to combine (photo 2).

Fry the omelette in a non-stick frying pan (photo 3) until it is golden on both sides, and enjoy!

How to cook the perfect omelette

Omelettes can be notoriously tricky to cook, and we’ve all had our fair share of split omelettes! Here are some tips to ensure your omelettes come out perfect every time:

  1. Use a non-stick frying pan. This is ESSENTIAL for ensuring your omelette flips easily. Make sure you buy a good quality non-stick frying pan and look after it well.
  2. Cook the omelette over medium heat. Ensure the pan is heated before adding a dollop of butter or a splash of oil. Spread the fat around the pan to coat it well.
  3. Once you add the eggs, don’t touch the omelette. Once you have poured in the eggs and spread them evenly around the pan, leave the omelette alone to cook on the first side. Then carefully flip the omelette, and repeat the same for the second side.
  4. Use a silicone spatula to flip the omelette. A metal utensil will damage your nonstick pan, so it’s best to opt for silicone cookware to flip the omelette.

Variations on this recipe

This masala omelette is delicious alone, but here are a few tasty variations you may like to try:

  • Experiment with adding different vegetables such as diced tomatoes, mushrooms or spinach.

What to serve with masala omelette:

There are a multitude of ways to enjoy this healthy breakfast:

  • Alongisde hot, buttery toast or paratha
  • In a sandwich, between two slices of buttered bread with cheese and green chutney
    • If you are making a sandwich with the omelette, you may wish to fold over each side of the omelette when cooking it to produce a ‘square’ omelette. Alternatively, slice the circular omelette in half and place a folded half into a bread bun/pav.
  • With a steaming cup of masala chai and a good book (my personal favourite!)

Absolutely! If you prefer a milder flavour, simply skip the chillies and chilli powder.

This easy masala omelette is made with red onion, peppers, green chillies, and spices, and makes a delicious desi-style breakfast with chai.

Ingredients

  • 2 Free Range Eggs use organic if possible
  • 1 Baby Red Pepper (capsicum), finely diced
  • 1/4 Red Onion finely diced
  • 1 Green Chilli finely chopped; use more/less depending on your preference
  • 1 tbsp Coriander Leaves finely chopped
  • 1/8 tsp Turmeric Powder
  • 1/8 tsp Ground Cumin
  • 1/8 tsp Ground Coriander
  • 1/8 tsp Chilli Powder optional
  • 1/2 tsp Butter for frying, can sub oil or ghee

Instructions

  • Heat up a nonstick pan over medium heat. Whilst the pan is heating up, crack the eggs into a medium mixing bowl and whisk with a fork until there are some bubbles.
  • Add the chopped peppers, onions, chillies and coriander to the mixing bowl along with the spices. Add salt and pepper to taste, and mix well to combine.
  • Once the pan is heated, add the butter (or oil) and spread around the pan to coat it well.
  • Pour in the egg mixture and spread out using a silicone spatula, ensuring the base of the pan is covered and the vegetables are evenly dispersed in the pan.
  • Leave the omelette to cook on one side until it is slightly golden underneath, then carefully flip the masala omelette using a silicone spatula. Cook on the other side until golden before transferring to a plate.
  • Serve with hot, buttery toast and masala chai. Enjoy!
