What ingredients will I need?
This simple recipe requires just 9 ingredients:
- Bread. I like to use a baguette or ciabatta to make garlic bread. You can also use sourdough slices to make individual garlic bread ‘toasts’.
- Garlic. No garlic bread would be complete without garlic! In this recipe we are roasting a whole bulb of garlic until it is sweet, nutty and rich. The flavour of roasted garlic is much more subtle than fresh garlic, and it compliments the cheese and jalapeños delightfully!
- Olive oil. For roasting the garlic.
- Butter. Make sure you use softened room temperature butter so that you can easily spread it on the bread. You can also substitute vegan butter for a dairy-free option.
- Jalapeños. You can use fresh or jarred jalapeños in this recipe – whatever you have on hand. Make sure to chop them finely so you get some heat in every bite.
- Spring onions. With their subtle garlicky flavour, spring onions make an excellent addition to this recipe.
- Mayonnaise. This is optional but adds a little extra richness to the garlic bread and is highly recommended. You can also substitute vegan mayo if desired.
- Cheddar cheese. I recommend a sharp/mature cheddar but feel free to use your favourite variety.
- Mozzarella. Always buy fresh mozzarella balls and not the pre-grated stuff! The flavour is extremely different.

First prepare the roasted garlic by slicing the top off the head of garlic, drizzling with olive oil and sprinkling salt and pepper (photo 1).
Roast the garlic for 25-30 minutes until the garlic cloves are soft (photo 2).
Squeeze out the roasted garlic cloves into a medium bowl along with the jalapenos, spring onions, butter and mayonnaise (photo 3).
Photo 4 shows the prepared garlic butter. Generously spread this over each slice of your baguette or ciabatta (photo 5) and top with the grated cheeses and more jalapeños (photo 6). Then bake the garlic bread for 10-12 minutes until golden and bubbly on top!

- Use fresh ingredients. Fresh bread, garlic, and high-quality cheese will make a world of difference in the flavor of your final dish.
- Adjust the spice level to your preference. For a milder taste, remove the seeds from the jalapeños. For extra heat, add more jalapeños as well as some finely chopped green chillies!
- Don’t Skimp on the Cheese. Use a generous amount of cheese to ensure every bite is gooey and delicious!
- Bake to Perfection. Keep an eye on your garlic bread while it bakes – you’re aiming for it to be golden brown and crispy on the edges, with melted bubbly cheese on top.

- 1 Baguette or Ciabatta Loaf fresh is best
- 1 bulb Garlic
- 1/2 tsp Olive Oil
- 55g/ 1/2 stick Butter softened, can sub vegan butter
- 1/4 cup Jarred Jalapeños finely diced
- 2 Spring Onions finely chopped
- 1 tbsp Mayonnaise optional, can sub vegan mayo
- 40g/ 1.5 oz Cheddar Cheese grated
- 125g/ 1 ball Fresh Mozzarella grated
- Salt + Pepper to taste
Instructions
- Preheat the oven to 210°C/410°F.
- First prepare the roasted garlic: slice the top off the whole bulb of garlic to expose the cloves inside (see photos in the blog post above). Place the garlic bulb on a square of baking paper or foil.
- Drizzle the olive oil over the garlic and season with salt and pepper. Cover the bulb with the paper or foil and bake for 25-30 minutes until the garlic is soft.
- Slice the baguette or ciabatta in half lengthwise and place on a baking tray.
- Prepare the garlic butter: add the softened butter, diced jalapeños, chopped spring onions and mayonnaise to a medium bowl. Remove the garlic from the oven and squeeze out the garlic cloves into the bowl.
- Mix the garlic butter together, ensuring the garlic cloves are well mashed up.
- Grate the mozzarella and cheddar cheeses and transfer to a medium bowl. Mix them together to combine.
- Generously spread the garlic butter mix over each slice of the baguette, ensuring that the butter is spread up to the edges.
- Top each slice of baguette with the cheese mixture and some extra jarred jalapeños (optional).
- Bake the cheesy jalapeño garlic bread for 10-12 minutes until golden and bubbling. Enjoy!
