Rose Falooda

Rose falooda is a moreish drink made with rose syrup, milk, vermicelli, basil seeds, jelly, and a scoop of ice cream for a real treat!

Ingredients

For the rose jelly:

  • 5 grams Agar Agar Strands
  • 1 cup/ 250 ml Cold Water
  • 1 tbsp Rose Syrup
  • 2 tbsp Sugar to taste

For the falooda:

  • 1 tbsp Basil Seeds
  • 1/2 cup/ 125ml Cold Water
  • 35 grams Vermicelli Noodles
  • 4 tbsp Rose Syrup
  • 2 cups/ 500ml Milk of choice
  • 4 scoops Vanilla Ice Cream to serve
  • 1 tbsp Chopped Pistachios to serve

Instructions

  • Prepare the rose jelly by adding the agar agar strips, cold water, rose syrup and sugar to a saucepan. Taste the liquid and adjust the level of sugar to your preference.
  • Place the saucepan over low heat and cook gently, stirring frequently, until the agar has dissolved and the mixture is just boiling. Pour the jelly into a glass dish and leave to cool at room temperature before transferring to the fridge to set for 1 hour.
  • Meanwhile, you can prepare the other components. Soak 1 tbsp basil seeds in 1/2 cup cold water for 15-20 minutes until the basil seeds have expanded. Boil the vermicelli noodles according to packet instructions, then drain and rinse in cold water. If your vermicelli comes packaged as baskets, I recommend crushing the vermicelli into smaller pieces before boiling.
  • Once the rose jelly has set, cut into small cubes and set aside for serving the falooda.
  • Now it's time to assemble the falooda! To each serving glass, add 1 tbsp rose syrup, 1/4 cup soaked basil seeds, 1/4 cup vermicelli and 1/4 cup rose jelly cubes. Top up the glass with your milk of choice leaving roughly 1 cm gap at the top.
  • Serve the falooda topped with a scoop of vanilla ice cream, chopped pistachios and your favourite toppings. Enjoy immediately!

Notes

  • Best served immediately. You can prepare components ahead of time and refrigerate until needed.
