Ingredients

  • ½ cup/ 50 grams Oats rolled oats or porridge oats
  • ⅛ cup/ 20 grams Raw Almonds or hazelnuts/peanuts/walnuts
  • 4 Medjool Dates soft and sticky
  • 2 tsp Cocoa Powder
  • 1 tsp Peanut Butter

Instructions

  • Add the oats and almonds to a blender or food processor and grind into a fine powder. Add the powder to a medium bowl and set aside.
  • Check your dates are soft by giving them a squeeze. If they are too firm, soak the dates in hot water for a few minutes until soft and squidgy.
  • Add the dates, peanut butter and cocoa powder to the blender and blend until creamy and well combined. If it is not blending, you can add a little water.
  • Add the blended date mixture to the bowl and use your hands to bring everything together into a sticky dough.
  • Roll the dough into 8-10 balls and enjoy!

Notes

  • If the mixture is too wet, add a few oats to help bind it. If it is too dry, add a little water. The mixture should be sticky and easy to roll into balls.
  • These energy balls will keep in the fridge in an airtight container for up to 1 week.
