These cereal bars are packed with yummy plant protein, and are made with only 6 ingredients!


Today I’m sharing a recipe for Coconut and Chia Cereal Bars. They are incredibly easy to make, packed with the good stuff (and a little butter!) and of course they taste SO. GOOD.
I have been busy experimenting with this recipe to try and get them to hold together. The first batch was less ‘Cereal Bars’ and more ‘Granola’ but still tasted good nevertheless! However I discovered the secret to keeping them whole is to freeze them before and after baking. (I discovered this as a result of my impatience haha)

I do hope you give these a try – they are nut-free and the perfect combination of chewy and crunchy. This recipe would be great to make with kids as well.

Making homemade cereal bars is much better than buying store bought as you can personalise them with what you like. Also you know exactly what’s going into your body, which is in this case, a whole lot of goood stuff. Did you know Chia Seeds contain all 9 essential amino acids? Also, oats are a complex carbohydrate meaning it takes longer for your body to break it down. They are an excellent source of slow release energy. and if that doesn’t make you want to start cooking these right away, let me tell you this: they have only 6 ingredients in!

Prep Time 10 minutes
Cook Time 10 minutes
Chilling time 15 minutes
Total Time 35 minutes
Servings 9 squares

  • 75 grams Butter or vegan alternative
  • 50 grams Honey or maple syrup
  • 150 grams Oats
  • 50 grams Special K Cereal or Rice Krispies
  • 25 grams Dessicated Coconut
  • 20 grams Chia Seeds optional


  1. Preheat the oven to 180 degrees. Grease a 20cm square tin.

  2. Melt the butter in a small saucepan over low-medium heat.

  3. In a large mixing bowl, add the oats, cereal, coconut, and chia seeds. Mix well.
  4. Add the butter and honey and mix well.
  5. Press the mixture into the tin and FREEZE for 5 minutes or so until firm.
  6. Bake for 10-15 minutes (keep an eye on them!) until golden.
  7. Leave to cool in the kitchen for a while then transfer to the freezer for another 10 minutes. Remove and slice into squares and serve.


  • Should keep for a few days at room temp. in an airtight container, although I wouldn't know, as they didn't last that long!
