Okay, let’s share the first recipe!

Going with the “Fresh Start” theme, I am sharing a recipe for a healthy and VEGAN protein-packed blueberry smoothie bowl. It is an incredibly easy breakfast to make and looks gorgeous.

Smoothies are a great way to start the day as you can add whatever you like to them. I normally add:
  • Fresh/Frozen Fruit (depending on what’s in the fridge!)
  • Fruit juice/coconut water
  • Sometimes I add oats/nuts/chia seeds for extra protein.

BLUEBERRY SMOOTHIE BOWL

This blueberry smoothie bowl is deliciously creamy and packed with hidden protein, making it an excellent breakfast or snack.

Ingredients

  • 2 handfuls Frozen Blueberries plus a few extra for decoration
  • 1-2 tablespoon Oats
  • small handful Almonds
  • 50 millilitres Coconut Water
  • splash Vanilla Extract optional
  • 1 teaspoon Pumpkin Seeds roasted

Instructions

  1. Add all ingredients to a blender, reserving a few blueberries and the pumpkin seeds for decoration.

  2. Blend until smooth. 

  3. Pour the smoothie into your favourite bowl or glass.

  4. Top with the reserved blueberries and pumpkin seeds.

Recipe Notes

  • You may need more/less coconut water depending on your desired consistency. I like to start with a minimal amount and gradually add more for a thick smoothie.
  • Don't worry if you don't have all the ingredients! The beauty of smoothies is you can put in whatever you like or whatever you hand.
